In 2 days I start the October Unprocessed food challenge. While I think I have dinners covered, breakfasts and lunches will be more difficult.
Let’s take breakfast, she says as she eats organic breakfast cereal. I thought I was doing well to eat organic, but cereal is highly processed. Not to mention the amount of sugar. I see a lot of eggs and oatmeal. I have been wanting to make my own granola, this is a good time to try it.
But lunch without pizza, Mac & Cheese, or peanut butter? How will I survive a week, let alone a month? I need help on what to make for the boys (who usually shun my evening meals). We made hand pies last week, can do some of that and freeze them. What else? I may just become a pie crust queen.
